Il dott. Paolo Panatero biologo si occupa da alcuni anni di acqua alimentare, in particolar modo della rilevazione della biodisponibilità degli ioni ad attività antiossidante in essa contenuti. Negli ultimi tre anni si è occupato di radicali liberi ed ha brevettato uno strumento diagnostico che è in grado di rilevarne la presenza con una semplice analisi dell'urina (Brevetto d'invenzione industriale n. SV2000A000019).
Utilizzando questo strumento su varie soluzioni biologiche alimentari, fra cui vari tipi di acqua il dott. Panatero ha evidenziato una nuova variabile di qualità:

Con numerosi test, ha individuato l'acqua più riducente d'Italia, nonchè la zona geografica dove sgorgano acque che presentano questa proprietà in forma massima.
Un'acqua ad elevato Ea possiede un'azione contro i radicali liberi e quindi contro lo stress ossidativo, che genera gravi danni biomolecolari in sede tissutale.

The
industrial invention Patent originates from a scientific discovery
relating to the electrochemistry of biological solutions (bio potential),
which was carried out by the undersigned.
On
the basis of this exceptional possibility, it is possible to proceed with
the manufacturing of an industrial instrument at a low production cost,
which could then become accessible to a large number of end users, due to
the invention’s characteristic and the methodology, which in this case
has been specially studied.
The
main principle of this invention is based on the discovery of an
unexpected property; two metals that are used as a pair, like electrodes
in an electrochemical cell.
The
instrument that has been derived from this application is of great
commercial interest, because it is possible to discover the presence or
the absence of free radicals in the serum, as well as the type of activity;
this is due to the methodology that has been specially studied and
measurements taken on a biological fluid (an easily obtainable type, e.g.
urine).
The
user-friendliness and the easy servicing of the instrument (currently
being tested on prototypes) should be underlined, as well as the
possibility of repeating the measuring process several times, even during
the same setting, without having to change the reagents, etc.
The
instrument, as a whole, allows the following:

it reveals whether a solution is oxidising or reducing;
**
it shows the intensity of an oxidising or reducing situation;
**
it shows the “quality” of the
biological reducing organic condition’s reducing condition;
**
one of the instrument’s models can measure the redox in the tissues
situation and by using an even more sophisticated model, can
measure the cytoplasm in the cell.
The scientific areas where this instrument can be used, vary from biology to biodiagnostics, up to the science of nutrition.

As noted, this potential value is a direct consequence of an organic condition, due to values of existing relationships e.g. uric acid and free radicals.
The minus sign is indicative in relation to a reducing condition.
The
